Mixed Salad

For the salad:                                                                        For the lemon and honey dressing:

A small head of lettuce                                                       5 tbs. sunflower oil

Half a cucumber                                                                   1 ˝ tbs. lemon juice

8 oz. baby plum or cherry tomatoes                                  1 tsp. honey

2 med. Carrots                                                                       a pinch of salt and of ground black pepper

Eat right away or serve it as part of a meal.

1. Pull the leaves off the head of lettuce.  Rinse them in cold water and shake them dry.  Tear them into pieces, then put the pieces into a large bowl.

2. Cut the ends off the cucumber, then slice it finely.  Cut the tomatoes in half, then add the cucumber and tomatoes to the bowl.

3. Peel the carrots and cut off their ends.  Cut them in half lengthways, then cut them into very thin strips.  Add the carrot to the bowl.

4. For the dressing, put the sunflower oil, lemon juice, honey, salt and pepper into a jar with a screw top.  Then, screw on the lid.

5. Shake the jar to mix the dressing over the salad, then gently mix everything together with a spoon and a fork.
