CREAMY CHICKEN

4 skinless, boneless chicken breasts                                2 tsps. ground corlander

2 level tsps. cornstarch                                                  1 tsp. ground cumin

1 cup (8oz.) thick plain yogurt                                         ˝ cup coconut milk

1 onion                                                                          1 chicken bouillon cube, mixed with 1/3 cup

2 tbls. Vegetable oil                                                                   boiling wate

2 cloves of garlic, crushed                                              a pinch of salt and of ground black pepper

˝ tsp. ground ginger                                                      2 tbs. chopped fresh coriander

˝ tsp. ground tumeric

Serve with boiled Basmati rice.

1. Trim any white fat off the chicken breasts.  Cut each chicken breast into three equal-sized pieces.  Wash your hands well.

2. Mix the cornstarch and 2 tbs. of yogurt in a bowl.  Then, mix in the rest of the yogurt, a little at a time.

3. Cut the ends off the onion and peel off the skin.  Cut the onion in half, slice it, then cut it into small pieces.

4. Put the onion into a large saucepan with the oil.  Cook it on low heat for 10 minutes and stir it as it cooks, then take if off the heat.

5. Add the garlic ginger, tumeric, corlander and cumin.  Gently heat the mixture for 2 minutes, stirring it all the time.

6. Turn the heat down very low and add the chicken.  Add and stir in the yogurt mixture 1 tbl. at a time.

7. Stir in the coconut milk and broth, a little at a time.  Mix in the salt and pepper, too, then put a lid onto the pan, but leave a small gap, so that the steam can escape.

8. Cook the mixture on low heat for 30 minutes, stirring it often.  Then, cut a piece of chicken in half, to see if it is cooked.  If the chicken is cooked, it will be white inside.

9. If the chicken is even slightly pink, cook it for another 5-10 minutes, then check it again.  Stir in the chopped corlander
