Chili con Carne

Half a beef or vegetable bouillon cube                    14 oz. can red kidney beans

1 onion                                                                     14 oz. can chopped tomatoes

1 clove of garlic, crushed                                         6 oz. can tomato paste

1 ˝ tbs. vegetable oil                                               1 tsp. brown sugar

1 lb. extra-lean ground beef                                     ˝ tsp. mixed seasoning

2-4 tsps. mild chili powder                                        2 pinches of salt & of ground black pepper

1 tsp. ground cumin

Serve right away with boiled rice, noodles or spooned into a baked potato.

1.       Put the bouillon cube and 1 cup of boiling water into a heatproof container.  Stir them well, then put the container aside.

2.       Use a large pan.  Peel the onion and cut it in half.  Slice it, then cut it into small pieces.  Put the onion, garlic and oil into a saucepan.

3.       Stir everything often.  Gently heat the pan on low heat for 10 minutes.  Then, turn the heat up to medium and add the ground beef.

4.       Cook the beef for 10 minutes, or until it is brown.  Stir it all the time, breaking up any lumps with a wooden spoon.

5.        Take the pan off the heat.  Stir in the chili powder and cumin.  Open the can of beans and using a colander, rinse them under cold water.

6.       Add the beans, broth, tomatoes, tomato paste, sugar seasong, salt and pepper to the pan.  Then, stir everything well.

7.       Heat the chilli con carne until it boils.  Stir it, then reduce the heat to low.  Put a lid onto the pan, leaving a small gap.

8.       Cook the chili for 15 minutes, then remove the lid.  Cook it for 15 minutes more, stirring it every now and then.
