Potato Soup
3 leeks or 4 large green onions 1
vegetable bouillon cube
1 onion 1
bay leaf
3 Tbs. butter a
pinch of salt and of ground black pepper
About 3 medium potatoes ½
cup milk
Eat the soup on the day you make it. Stir a spoonful of sour cream into each bowl
and sprinkle with chopped chives.
1. Cut the ends off the
leeks or green onions and peel off the outer layer. Wash and slice them. Peel the onion, then
chop it.
2. Heat the butter in a saucepan on low heat until it
melts. Stir in the leeks and onion, then put a lid onto the pan.
3. Cook the onions and leeks for 8-10 minutes, stiring them with a wooden spoon every now and then. When they are soft, turn
off the heat.
4. Peel the potatoes and cut them in half. Then, cut them into chunks. Put the bouillon cube into a heatproof
container.
5. Add 2 cups of boiling water.
Stir it until the bouillon cube dissolves. Add the chunks of potato and the broth to the
pan.
6. Add the bay leaf, salt and pepper. Heat the soup until it boils. Reduce the heat, so that it is bubbling
gently. Put on the lid.
7. Cook the soup for 15-20 minutes. Press the potatoes with a wooden spoon, to
see if they are soft. Turn off the heat
and remove the bay leaf with a spoon.
Let the soup cool for 15 minutes.
8. Blend the soup in a food processor, one half at a time. Then, pour the soup back into the pan and
stir in the milk.
9. For hot soup, gently reheat the soup until it is just
starting to bubble. For cold soup, put
the soup into the refrigerator.
