Vegetable Casserole

For the vegetable casserole:                              2 tsp. light soy sauce

3 medium carrots                                                  2 tbs. soft brown sugar

4 green onions                                                      ˝ tsp. salt

4 baby mushrooms                                              a casserole dish with a lid

3 cabbage leaves                                                  For the dipping sauce:

2/3 cup tofu                                                           2 lemons

4 oz. udon noodles                                              6 tbs. light soy sauce

1 vegetable bouillon cube                                  1 tbs. brown sugar

2 ˝ cups boiling water

Serve right away.  Dip the vegetables into the dipping sauce before eating them.

1. Peel the carrots and cut off the ends.  Cut them in half, then in half lengthways.  Cut each piece into thin strips.

2. Trim the ends off the green onions.  Peel off the outer layer.  Then, cut the onions into pieces about 1 inch long.

3.Wipe the mushrooms clean on a paper towel.  Then, cut the ends off the stems and cut a cross into the top of each one.  Turn on your oven to 325 deg. F

4. Roll each cabbage leaf into a sausage shape.  Slice across each one.  The slices will make thin strips when they unroll.

5. Carefully cut the tofu into 1 inch cubes.  Then, cook the noodles, following the instructions on the package.

6. Arrange the vegetables, noodles and tofu in the casserole dish.  Stir the bouillon cube into the boiling water in a container.

7. Mix in the soy sauce, brown sugar and salt.  Pour the mixture into the dish.  Cover the dish with a lid and bake the casserole for about 45 minutes.

8. To make the dipping sauce, cut the lemons in half and squeeze them.  Put 6 tablespoons of juice into a bowl.

9. Mix the soy sauce and brown sugar into the lemon juice.  Chill the dipping sauce in the refrigerator while the casserole cooks.
