Spicy Bean Soup

1 red onion                                                       1 Veg. bouillon cube, mixed with 1 ˝ cups boiling

1 Tbs. olive oil                                                  water

1 clove garlic, crushed                          a pinch of salt and of ground black pepper

˝ tsp. mild chili powder                                    14 oz. can red kidney beans or mixed beans

˝ tsp. ground coriander                                    1 Tbs. chopped fresh coriander or parsley

˝ tsp. ground cumin

1 ˝ cups tomato juice                                       Eat right away.

1. Peel the onion and cut it in half.  Slice it finely, then chop it.  Put the chopped onion and oil into a large saucepan.

2. Gently cook the onion on low heat for 6-10 minutes, until it is soft.  Stir it often, to keep it from sticking to the pan.

3. Take the pan off the heat.  Then, add the garlic, chili powder, ground coriander and ground cumin.

4. Stir everything well, then heat the mixture gently for 1 minute.  Stir it all the time, to keep the spices from sticking.

5. Add the tomato juice, broth, salt and pepper.  Drain the beans through a colander in the sink, then rinse them well.

6. Add the beans to the pan, then stir the soup and heat it until it boils.  Then, reduce the heat so that it is bubbling gently.

7. Put a lid onto the pan, leaving a small gap to let out the steam, then cook the soup for 15 minutes, stirring it often.  Turn off the heat, then let it cool for 15 minutes.

8.Using a ladle, put half of the soup into a food processor.  Blend it until it is smooth.  Then, ladle the soup back into the pan.

9. Mix the soup in the pan, then heat it until it is bubbling gently.  Stir in the chopped coriander or parsley, then serve it.
