Macaroni and cheese

1 cup dried macaroni                                                           2 2/3 cups milk

4 Tbs. butter                                                                         a pinch of salt and of  ground black pepper

4 Tbs. all-purpose flour                                                       7 oz. Cheddar cheese, grated

Preheat your oven to 350 deg. F.  Eat right away.  Serve with lettuce and slices of cucumber.

1. Boil the macaroni following the instructions on the package.  When it is cooked, drain it through a colander, then pour it back into the pan.

2. To make the sauce, melt the butter in a saucepan on low heat.  Stir in the flour, using a wooden spoon, and cook the mixture for 1 minute.

3. Take the pan off the heat and add a little milk.  Stir it in really well, then stir in the rest of the milk, a little at a time and add the salt and pepper too.

4. Heat the pan again and start to bring the sauce to a boil.  Stir it all the time to keep it from sticking to the pan.

5. The sauce will begin to thicken.  Let it bubble for 1 minute, then take it off the heat.  Stir in 6 oz. of the cheese.

6. Pour the sauce over the cooked macaroni.  Stir it in really well, so that it coats all of the pieces of  macaroni.

7. Dip a paper towel into some margarine and rub it over the inside of an ovenproof dish.  Pour in the cheesy macaroni.

8. Sprinkle the rest of the cheese over the top.  Bake the macaroni and cheese for about  25 minutes, until the top is golden brown.

9. Wearing oven mitts, lift the dish out of the oven.  Let the macaroni and cheese cool for a few minutes, then serve it.
