Little Pear Tarts

Makes 12

13-15 oz. package of ready-made pie crust                                      ½ tsp. ground cinnamon

Taken out of the refrigerator 20 min. before                                  2 soft, sweet pears or 4 pear halves from a can

  You start.                                                                                             Milk, for glazing

1 small orange                                                                                       a greased 12-hole muffin tray

1 ½ tsp. butter                                                                                      a 3 inch round cutter and a smaller star-shaped

3 tbs. dried cranberries                                                                           cutter.

2 tbs. soft light brown sugar

Heat your oven to 375 deg. F in step 5  Eat right away, or store in an airtight container and eat within 3 days.  Sift a little powdered sugar over the tarts before you serve them.

1. Grate half of the rind from the orange using the small holes on a grater.  Cut it in half and squeeze the juice from one half.  You don’t need the other half of the orange.

2. Put the rind and 1 tbs. of the juice into a saucepan.  Add the butter, cranberries, brown sugar and cinnamon.

3. Using a potato peeler, carefully peel the pears.  Cut them into quarters and cut out the cores.  Cut the quarters into small pieces.

4. Put the pieces of pear into the pan.  Heat the mixture on low heat for 10 minutes.  Take it off the heat, then let it cool.  Stir the mixture all the time.

5. Turn on your oven.  Dust a clean work surface with flour, then roll out the pastry until it is about ¼ inch thick.

6. Cut 12 circles from the pastry with the round cutter.  Then, squeeze the scraps to make a ball and put it aside.  Cut the circles close together.

7. Press the circles into the holes in the muffin tray.  Then, put a heaped teaspoon of the pear mixture into each one.

8. Roll out the ball of pastry.  Cut out 12 stars with the star cutter.  Lay them on the tarts, then brush them with milk.

9. Bake the tarts for 20 minutes, then lift the tray out.  After 10 minutes, lift them out of the tray with a blunt knife.
