Little Pastries
13-15 oz. package ready-rolled puff pastry, taken out
of the refrigerator 15-20 minutes before you start.
1 medium red onion 1
cup (5 oz.) mozzarella cheese
1 tbs. olive oil 12
cherry tomatoes washed
A pinch of salt and of ground black pepper 1 tbs. milk
½ tsp. Italian seasoning 2
greased baking trays
Preheat your oven to 425 deg. F.
Cool for 5 minutes before eating.
1. Using a sharp knife, cut the ends off the onion. Peel it, then cut it
into quarters. Slice each quarter
finely.
2. Put the sliced onion into a frying pan with the olive
oil. Gently cook the onion on low heat
for about 5 minutes. Stir as it cooks.
3. Take the pan off the heat.
Stir in the salt and pepper and the seasoning. Then, unroll the pastry and cut it into 24
squares.
4. Put the squares onto the baking trays, leaving spaces between
them. Prick the middle of each square
twice with a fork.
5. Put the mozzarella onto a cutting board. Cut the mozzarella into tiny cubes, then cut the cherry tomatoes in half.
6. Pour the milk into a mug.
Then, brush milk around the edge of each square, making a border about ½
inch wide.
7. Spoon some of the onion mixture onto each pastry square. Make sure that you don’t cover the milk
border.
8. Put half of a tomato onto each square, then
scatter a few cubes of mozzarella on top of each one.
9. Cook the pastries for 12-15 minutes. The edges will rise and turn brown. Lift them off the baking trays with a spatula
and leave them to cool for 5 minutes.
