Lamb or Beef Kebabs

For the marinade:                                              For the kebabs:

1 tbs. fresh lemon juice                         2 large boneless lamb steaks or beef rump roast,

A large pinch of dried oregano                    each weighing about 6 oz.

4 tbs. olive oil                                                   1 red onion

1 clove of garlic, crushed                                  2 zucchini

A pinch of salt & of ground black pepper          1 red pepper

8 kebab or satay sticks (if you’re using wooden   sticks, soak them in a dish of water to keep them

                                                                        from burning on the grill)

1. For the marinade, put the lemon juice, oregano, olive oil, garlic, salt and pepper into a large bowl.  Stir everything well.

2. Carefully trim the fat off the lamb or beef.  Then, cut the meat into ¾ inch cubes.  Mix the cubes.  Mix the cubes into the marinade.

3. Cover the bowl with plastic foodwrap and put it in the refrigerator for at least an hour.  Meanwhile, prepare the vegetables.

4. Peel the onion and cut it into quarters.  Then, cut across each quarter.  Separate each chunk into double slices.

5. Cut the ends off the pepper.  Remove the seeds and cut it into ¾ inch squares.  Then, cut the zucchini into thick slices.

6. Carefully push one cube of meat onto each kebab or satay stick.  Be careful of the sharp end of the sticks.

7. Push all the vegetables and pieces of meat onto the sticks.  Then, heat the grill or broiler to medium heat, for 5 minutes.

8. Put the kebabs onto the rack in a grill pan.  Brush them with some marinade, then grill them for 10 minutes.

9. Turn the kebabs over.  Spoon the rest of the marinade over them.  Grill them for 5-10 minutes, or until they are browned.  Be careful-the grill pan will be very hot.

Take the vegetables and pieces of lamb or beef off the sticks, then serve with pita bread and lettuce.
