 FOR  WEEK 14—NOVEMBER 19,  2007

QUOTE  OF  THE  WEEK:

True humor is fun - it does not put down, kid, or mock. It makes people feel wonderful, not separate, different, and cut off. True humor has beneath it the understanding that we are all in this together.

D)  Thank you to everyone who contributed to the success of the 2007 Parenting Fair last Tuesday night.  Well done.  Special thank you to our presenters:  Brad Huntington, Arin Anderson, Jeff Cook, and Lisa Mathahs.

E) Thanksgiving.  What are you thankful for?    Family?  Faith community?  Children?   Friends?  Neighbors?  Health?  This is a wonderful time to ponder what really is important to us.   Do we really give of ourselves or do we give our time, money, and talent only when it is convenient or profitable to us personally?  Who are we really?  This is a wonderful time to reflect on those life changing questions.   Celebrate by living a thankful life.

F)  November 29 we will host Nancy Prohaska. She will be speaking to parents about “Positive Discipline as a Parent.”   This evening is sponsored by Head Start and we have partnered with them to also offer the information to our parents with school-age children.  This will be a great evening.  Flyers will go home to parents twice.

G)   Grandparent’s Day 2007 ----- A huge success.   Compliments to Mrs. Kettwick and all the teachers.  Special thank you the kitchen staff for their extra effort preparing extra breakfast and thank you to the custodial staff for setting up and cleaning up.

H)  “Glory only comes when one pursues their dreams.  How many of us know what we really want and go for it?  How many of us have enough trust, strength, and faith to believe that we could do the impossible?”  Darrell Scott, father of Rachel Scott,  Rachel’s Challenge

M)  THINGS  THAT  MAKE  YOU  GO   HHHMMMMMM  .   .  .

1.  If you're in a vehicle going the speed of light, what happens when you turn on the headlights?
2. Why didn't Noah swat those two mosquitoes?
3. Why do hot dogs come 10 to a package and hot dog buns only 8?
4. Why do tourists go to the tops of tall buildings and then put money into telescopes so they can see things on the ground close-up?
5. Why is it that bullets ricochet off of Superman's chest, but he ducks when the gun is thrown at him?
6. Why is it that night falls but day breaks?
7. Why is it that you must wait until night to call it a day?

CARROT CAKE

For the cake:                                                              For the topping:

2 med. Carrots                                                            1 cup powdered sugar

3 med. Eggs                                                               8 oz. full fat cream cheese, at room temperature

1 Cup Sugar                                                               1 Tbs. lemon juice

¾ cup sunflower oil                                                     ½ tsp. vanilla

1 cup (4oz.) chopped pecans                                       pecans or lemon rind, to decorate

1 1/3 cups all-purpose flour

1 ½ tsps. baking powder                                              Preheat your oven to 350 deg. F

1 ½ tsps. baking soda                                                 Store in the refrigerator and eat within 2 days.

1 ½ tsps. ground cinnamon

1 tsp. ground ginger

½ tsp. salt

A 7 x 11 in. shallow rectangular cake pan

1. Dip a paper towel into cooking oil and grease the pan.  Then, lay the pan on greaseproof paper and draw around it.

2. Cut out the rectangle and lay it in the pan.  Wash the carrots and cut off their ends, then grate them carefully on a grater.  Use the big holes on the grater.

3. Break the eggs into a small bowl.  Mix them well with a fork.  Put the sugar and oil into a large bowl and stir them for 1 minute.

4. Stir the eggs into the sugary mixture, a little at a time.  Then, stir in the grated carrots and chopped nuts, too.

5. Sift in the flour, baking powder, baking soda, cinnamon, ginger and salt.  Gently turn the mixture with a spoon.

6. When the mixture is well mixed, spoon it into the pan.  Bake the cake for 45 minutes, until it is well-risen and firm.

7. Leave the cake in the pan for 10 minutes.  Run a knife around the sides, then turn it out onto a wire rack.  Leave it to cool.  Peel off the greaseproof paper.

8. For the topping, sift the powdered sugar into a bowl.  Add the cream cheese, lemon juice and vanilla and stir well.

9. Spread the topping over the top of the cake.  Use a blunt knife.  Cut the cake into squares, then decorate them with pecans or lemon rind.
